Swordfish is much like lamb when it comes to wine pairings: just about any wine of the same color will match well. If you are looking for a wine to cut through the richness, go with a Vermentino from Sardinia or a Sauvignon Blanc from New Zealand or the Loire Valley. To complement the fish with something richer, a medium-bodied Chardonnay would work very well. Even a light-bodied red with low tannins would be a fine pairing. Consider a Beaujolais, Sancerre Rouge, or Etna Rosso, made from the Nerello Mascalese grape in Sicily.
