Stir-fried flank steak with green onions and chilis

Vouvray Demi-Sec, or German Riesling! This is one of those cases where the preparation of the dish will change the wine pairing. The Asian influence of the dish, with the soy component, as well as the spice of the chili peppers, moves the pairing to a white wine. The tannins present in nearly all red wines tend to clash with spicy foods, whereas, the small amounts of residual sugar present in Vouvray and Spätlese or Auslese Riesling will refresh the palate.
