Northern Rhone Syrahs are often marked by a refreshing black pepper, black olive aroma that would complement this preparation perfectly. The only exception is a small number of Cote-Roties, which often blend in small amounts of Viognier, and are generally more floral than an Hermitage, Cornas, or St.-Joseph, but even these can be majestic pairings.
