Baked apple aroma leaps from the glass in the initial whiffs after the pour; further air contact brings out delicate scents of pastry dough, nutmeg and light toffee. Entry offers succulent tastes of caramel, toasted marshmallow, and candied apple; midpalate stays the candied/caramel course, adding sweet, spicy traits of vanilla, maple, and oak. Ends on a sweet, confectioner's note of brown sugar. Lovely.The Beau family is one of the oldest Bouilleurs de Cru – artisanal cognac distillers - in Segonzac, the heart of Cognac’s first growth, known as the Grande Champagne region. Samuel Beau started distilling in 1895, bottling and selling part of his cognacs under his own name, which at that time was quite unusual. By 1914 following both Samuel’s death and the beginning of World War I, Samuel’s son, Paul, took over the family business. While he kept distilling, he decided to stop bottling the family’s eaux de vie. 1977 saw the rebirth of this activity: the Beau family, meticulously taking care of its 200 plus acres, all located in Grande Champagne, have since then kept bottling their cognacs under the Maison Paul Beau brand as homage to the ancestors. A majority of the vineyard is planted with the Ugni Blanc grape. On a tiny fraction Colombard is grown.
