There are so many incredible and creative chicken preparations! Your choice of preparation will shift the best wine pairing from one grape or winemaking style to another. The general rule is that light-bodied reds or white wines are the best pairings for chicken, but as with any rule, there are always exceptions. Champagne with fried chicken is not a pairing you hear about every day, but it works wonderfully! Some other ethereal pairings to try: chicken with a cream sauce with full bodied California Chardonnay, Coq au Vin with red Burgundy and Barbequed chicken with Zinfandel.
