Jean-Marc Pillot is an adroit winemaker with a recognized gift for using new oak "juste comme il faut", that is to say, "just enough". The whites are fermented in barrel, but Jean-Marc never uses more than 25% new wood so as not to overwhelm the intensity of fruit and sense of terroir specific to each wine. Bâtonnage is practiced to enrich the whites but is not exaggerated. Both the reds and the whites are aged 12 ¬ 18 months in barrel. The wines are manipulated as little as possible and are bottled unfiltered to preserve their purity.

As pure, refined, classy and elegant as the Caillerets is, this particular Chevalier goes it one better if only slightly with an understated and gorgeously stylish nose of simply astonishing complexity and nuance that continues onto the stunningly intense and finely detailed flavors that possess an enveloping palate impression, all wrapped in a saliva-inducing finish that doesn't quit. There is currently a background hint of toast on the finish but otherwise, this is seriously impressive juice.
